What do vegans put in their coffee? I am thinking of becoming a vegan, but I can't seem to find any vegan milk substitutes that work in coffee.

I'm not vegan (though becoming one is an eventual goal) but I love soy milk in my coffee and tea.  You can buy it plain or flavored, and it is delicious.  There are also some soy creamers on the market -- you may have to check the ingredient list to be 100% sure that they are vegan, but they are a good choice too if you like things a bit creamier.
